Abacha | African Salad

Abacha | African Salad

African salad is popularly known as Abacha. Abacha is an African version of salad with all the characteristics of a salad. There are different types of veggies, carbohydrate, protein and fat. This is a very popular dish in the Eastern part of Nigeria and also appreciated by other Nigerians. It is a meal in itself, very rich and filling. Though the ingredients are easy to find some ingredients can be substituted with other ingredients and the technique to making the dressing could be challenging if you don't know how to make it.  I will be showing you the secret of making the perfect African salad dressing and also some of the substitute to some of the traditional ingredients. After watching this video, you will be ready and confident to make your first or perfect African salad. 

Directions

  • Precook cow skin (kpomo) and stockfish (okporoko).
  • Season mackerel fish with salt, onion powder and Cameroon pepper, set aside to marinate for at least 30 minutes.
  • Soak dried shredded cassava in water for five minutes, rinse a couple of times and place in a strainer for the water to drain out.
  • Soak potash in water to dissolve it.
  • Wash and cut all the veggies
  • Cut cow skin into bite size.
  • Deep fry mackerel fish in vegetable oil.
  • Warm up the palm oil and pour in it a bowl, decant the potash water into the oil while stirring it. The potash is going to emulsify the water and oil to create a bright yellow color. The more potash water is added, the creamier it becomes. Add calabash nutmeg, Cameroon pepper, salt, diced onions, fresh pepper, seasoning cube, ground crayfish, whole crayfish, diced garden egg, cow skin, stockfish, ugba and mix everything together. Remove a portion of it and set aside.
  • Add the shredded cassava to the mixture and stir to combine.
  • Garnish with spinach (garden egg leaves), cucumber, fresh pepper, ring onions and fried fish.

 Ugba (shredded oil bean seeds)

 Cooked stockfish (okporoko)

 Cooked cow skin (kpomo)

Whole crayfish

Ground crayfish

 Garden eggs

 Cucumber

 Palm oil

 Potash

Seasoning cube

 Calabash nutmeg

 Cameroon pepper

 Fresh pepper

 Red onion

 Spinach 

 Salt  


Fried fish ingredients:

 Mackerel fish

 Salt

 Onion powder;

Cameroon pepper 

Oil for frying
