How to make banana chin chin

Banana chin chin is a healthy version of the Nigerian chin chin. Adding bananas to the recipe gives it a boost of nutrients and flavor. It is also a sneaky way to make your children eat their fruit. Banana is not only high in potassium, it also has other nutrients such as Vitamin C, Vitamin B6, Magnesium, Fiber, Calcium, Copper, Vitamin A, Protein, Carbohydrates and many more. 

Directions

  • In a bowl, add flour, salt, baking powder, ground nutmeg, sugar and powdered milk. Mix everything to combine. Then add the butter and mix it with the flour until it looks like bread crumbs. Make a well in the middle and set it aside.
  • In another bowl, add the peeled bananas and mash them with a masher or fork until it looks like a puree or smoothie. Add  rose water and some water (20 - 30 ml/1/4 cup), mix to combine.
  • Pour the wet ingredients into the dry ingredients Mix everything to combine until it forms a solid ball of dough. Cover and set aside to rest for about 30 minutes.
  • After 30 minutes, dust your work surface with some flour then roll out a sizable piece of dough the you can handle. Roll it out until it is thin. With a knife or dough cutter, the dough into little squares or any shape that makes you happy. You can work on the dough until you are done or fry the first batch while cutting the next.
  • Heat up enough oil to deep fry the dough on medium heat. When it is hot enough, deep fry the little square dough until the is a remarkable change in color. This will take about 7 or more minutes. Remove the fried chin chin from the oil and let it drain on a piece of paper towel. Fry the remaining batches until you are done.
  • Spread them to cool before storing them in an airtight container.

Ingredients

5 cups all purpose flour

3 overripe bananas

3/4 cup light brown sugar

1/2 cup soft butter/margarine

1/2 cup powdered milk

1 tsp salt

1 tsp ground nutmeg

1 tsp baking powder

1 tsp rosewater

Vegetable oil for deep frying

50 ml  (1/4 - 1/2 cup) water
