Beans Porridge with Sweet plantains

Beans Porridge with Sweet plantains

Beans is a nutrient dense food and also very helpful with weight management.  This dinner recipe is easy with simple recipe. I will be showing you how to cook a simple and very delicious beans porridge with very few ingredients. 

Directions

  • Cook beans in a large pot of only water for about 30 minutes. Then decant and rinse with water.
  • Prep the onion and pepper
  • In a pot,  add water, palm oil, pepper, onion, salt to taste, beans and over ripe plantains. Stir everything together and cover to cook for about 40 minute or until done.
  • Once done, stir the beans to create the porridge consistency.

Ingredients:  

3 cups Black Eyed Peas

 1 over ripe Plantain  

1/2 Bulb Onion 

1 Habanero Pepper 

Palm Oil  

Salt
