How to make dark Caramel Syrup | Blackstrap Molasses

Directions

  •  Add a cup of sugar to a pan, add 1/4 cup of water  and let it dissolve on medium heat. It is one long continuous process. The sugar is going to pass through different stages from frothy to large bubbles until it develops a very dark color.
  • When it has developed a very dark brown color, turn off the heat and add  1/2 cup of hot water, stirring continuously.
  • Add 2 cups of sugar, stir to combine for a few minutes. Squeeze in the lemon juice and throw the lemon in. The lemon prevents crystallization of the sugar when it cool down. Cook for 5 - 10 minutes.
  • Check the thickness, if too thick, add a 1/4 cup of hot water at a time until the desired consistency is reached.
  • The final product should look and feel like honey


Ingredients

 1 cup Sugar 

1/4 cup water

2 cups Sugar

 1 cup Boiling water

1/4 Lemon

Directions

  • Add sugar to a pan and let the sugar melt on medium low heat. Do not stir it.
  • Start stirring when the sugar dissolves. Stir continuously until it develops a very dark brown color.
  • Turn off the heat and add hot water gradually. Be careful not to burn yourself because it will bubble up and sometime splatter.
  • Cook for a few more minute until you have achieved your desired consistency. It may look runny now but it thickens as it cools down
  • When it cools down, pour into a container and store in a cool place.


Ingredients

 1 cup dark brown sugar 

1/2 cup hot water
