Coconut Rice

Authentic Deltan Coconut Rice

  I am going to be showing you how I make my simple yet delicious coconut rice. Coconut rice brings a fond childhood memory to me. I created this recipe from the version of coconut rice I eat when I was young. It is mushy and creamy with only few ingredients that magnify the flavor of the coconut. You will love it. 

Directions

  • Grate or blend fresh coconut and extract the milk with hot water.
  • Parboil rice for about 5 minutes, rinse until the water runs clear.
  • Add rice to a pot, pour in the coconut milk (use a lot to make the rice mushy), add salt to taste, onion powder, white pepper to taste, seasoning cube, stir and cover to cook until done.
  • The rice should look mushy (overcooked). Stir and serve with sardine.



 Ingredients: 

2 cups Rice

 13.5 oz Can Coconut Milk

2 cups Coconut Chunks

 1 tsp Onion Powder

 Salt to taste

 White Pepper to taste

 Seasoning Cube  (optional)

 Sardine
