How to make Coconut rock buns

Coconut rock buns also known as coconut rock cake or coconut drops is a very delicious coconut snack that you will never get enough of. It can be enjoyed as a snack or as a meal with milk or juice. I usually make these for my kids to take to school and they really love it.

Directions

  • Preheat oven to 320 degrees F/ 160 degrees C
  • Line pan with parchment paper or grease pan with oil or butter
  • In a large bowl, sift flour, add baking powder, salt, ground cinnamon, ground nutmeg and sift together. Then mix to combine.
  • Add butter to flour and massage it into the flour until it is properly combined.
  • Add brown sugar and mix to combine.
  • Add coconut flakes, mix to combine. Then set aside.
  • In another bowl, crack and whisk 2 room temperature eggs, then add to the dry mixture (bowl of flour).
  • Add vanilla extract and milk gradually to form a dense consistency.
  • Scoop batter on the lined pan, space them apart to give them room to rise. Optional you can smooth the batter with the back of a spoon dipped in water to form a rounder shape. The water prevents the batter from sticking to the spoon.
  • Bake in the oven for 25 - 30 minutes.
  • Spread and cool them on a wire rack


Ingredients

3 cups all purpose flour

1 cup brown sugar

1/2  cup room temperature butter/margarine

1 cup room temperature milk/coconut milk/evaporated milk

2 cups coconut flakes

2  large eggs (room temperature)

1 tsp ground nutmeg

1 tsp ground cinnamon

1 tsp vanilla extract

2 tsp baking powder

1 tsp salt
