Cranberry orange bread

Cranberry Orange Bread

 Cranberry orange bread is a quick bread made with cranberries and oranges. It is mostly made during the festive season because cranberries are seasonal fruits that are in abundance from October through December. A lot of people make this bread during Thanksgiving and Christmas time. It is sweet and tangy from the orange and cranberries. The orange zest intensifies the citrus flavor which gives it an out-of-this world taste.

Directions

  • Soak dried cranberries in hot water for 30 minutes. After 30 minutes, strain it to separate the water from the fruit. This will also give it time to cool quickly.
  • Preheat oven to 350 degrees F/180 degrees C.
  • Grease 9" x 5" loaf pan with the butter wrapper and set aside
  • Zest one orange and juice 2 - 3 oranges to get 3/4 cup of orange juice.
  • In a bowl, add all the dry ingredients (flour, baking powder, baking soda and salt), whisk everything together and sift into a mixing bowl.
  • In another bowl, add sugar, melted butter(microwave butter for 10- 20 secs), 1 beaten egg and mix to combine. Then add vanilla extract, orange zest and juice, mix to combine.
  • Add wet ingredients to dry ingredients and gently mix until combined.  Add cranberries and fold them in.
  • Pour batter into greased pan and bake for 50 - 55 minutes or sometimes 60 minutes (depending on the heat of your oven).
  • After 50 minutes insert a toothpick into the middle and if it comes out clean, take it out. And if not, bake it for 5 more minutes or until done.
  • Set the bread on a rack to cool for 10 minutes in the pan, then remove from pan and let it continue to cool. It is best eaten a day or two later. Enjoy!



Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 large room temperature egg
  • 1/4 cup unsalted butter (melted)
  • 1 cup dried cranberries or 1 1/2 cups fresh cranberries
  • 3/4 cup orange juice
  • Zest of one orange
  • 1  1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1 tsp salt
