Sugar-free Pineapple Ginger Drink

Sugar-free Pineapple Ginger Drink

Sugar-free pineapple ginger drink is healthy immune boosting drink. It is a guilt free healthier version of the Caribbean pineapple ginger drink that is very delicious.

Directions

  • Wash and peel the pineapple.  Cut pineapple into small chunks (save the core) and set aside.
  • Rinse and dice the dates. Soak the dates in 1 cup of warm/hot water for about 30 minutes.
  • In a pot, add the pineapple core, sliced ginger, water and cook for 30 minutes. Then turn off heat and let it cool.
  • Blend the pineapple and the soaked dates in a blender, then strain to extract the juice.
  • In a pitcher, add the pineapple juice, pineapple/ginger infused liquid, lemon juice or extract, some ice and stir well. Add honey to your taste and stir well. Enjoy your refreshing glass of pineapple ginger drink.

  

 Ingredients:   

1 Pineapple 

2 fingers Organic Ginger   

1 cup Organic Dates   

Organic raw Honey   

1 tsp Lemon extract or 1 - 2 fresh lemon juice

How to make Pineapple Juice without a juicer or blender

Making your own juice at home removes any fear of what might be in the juice because you are in charge and you controls what goes in. If you live in a place where there is no electricity or you don't have the gadget to make your own juice, you can manually extract your pineapple juice in no time.

Directions

  • Wash and peel the ripe pineapple.
  • Cut pineapple into little cubes, then mash them with potato masher to squeeze out the juice.
  • Then strain it with a fine sifter or chiffon fabric.

Pineapple Lemonade

Sugar-free Pineapple Lemonade

This an immune boosting summer drink. Summer is the perfect time to make fruit drink because it is fruit season and the weather is warmer. What better way to cool down and enjoy refreshing drink that is also healthy.  With just few ingredients, you can make this refreshing and healthy version of lemonade. 


Directions

  • Rinse and dice the dates. Cook the dates with 2 cups of water over medium heat for about 10 minutes. Then set it aside to cool. When it cools, strain it and refrigerate the liquid. You could snack on the fibrous part or save it for your smoothie. You could still blend it with the pineapple too.
  • Squeeze or juice the lemons. Then refrigerate the juice.
  • Wash and peel the pineapple. Cut into small chunks and blend into a puree. Pass it through a fine sifter to extract the juice.
  • In a pitcher, add the lemon juice, pineapple juice, 4 cups of water and some ice and stir well. Enjoy your healthy and refreshing pineapple lemonade!


Ingredients: 

2 cups Pineapple chunks and juice

 1 cup freshly squeezed Lemons

1 - 2  cups  Dates 

 3 bottled Water

Sorrel Concentrate & Puree

Sorrel Concentrate & Puree

 Sorrel concentrate is made from the hibiscus extract that is cooked down to form a thick consistency. The puree on the other hand is blended to form a smooth paste. Sorrel puree can be used to make fruit cake or jam. The syrup can also be used as a glaze or diluted to make sorrel drink.

Directions 

  • Pour 4 cups of water to pan, add cinnamon sticks, cloves and lemon peel, cover and bring it to a boil. The lemon peel is rich in pectin which is used as a thickener. 
  • Wash the dried hibiscus flowers to get rid of sand. 
  • Add the petals to the to the pan and cook on a very low heat for 5 - 10 minutes. After 10 minutes, turn off the heat and let it steep and cool down. 
  • Once it cools down, carefully remove petals from the pan. This minimizes the chances of getting any sand.  Decant the extract. Blend the petals with a little of the sorrel extract. Enough to help with the blending process 
  • Pour the extract (2 cup) into a clean pan, add a cup of sugar and stir to dissolve. Cook on medium heat for 30 - 40 minutes, stirring frequently. After 40 minutes, remove from heat and allow to cool down. It thickens and it cool down.   


Ingredients   

4 oz Hibiscus flowers   

4 cups water  

 1 tsp cloves   

2 cinnamon sticks  

 Lemon peel   

1 cup sugar

Fura/Fula |Millet Smoothie

Fura/Fula |Millet Smoothie

Fura da nono is a very popular street food in the Northern parts of Nigeria and Ghana. It has a balance of sweet, spicy and tangy taste which makes it unique. Many fulanis swear that it has a lot of health benefits.

Directions 

  • Grind the millet grains. Add ginger powder, ground cayenne pepper, ground cloves, and black pepper to the millet flour, mix to combine. 
  • In a large pan/pot boil some water to cook the fura in. 
  • Add water gradually to the dry ingredients until it forms a solid ball of dough.  
  • Cut dough to desire size and form into a ball, create a hole in the middle like a donut. The enables the dough cook through faster inside out. 
  • Drop them into the boiling water and cook till done. This usually takes about an hour or more. The smaller balls cook faster. 
  • When done, pound them immediately with mortar and pestle (or blender). Add a little of the water the dough was cooked in to soften it. 
  • Once soft, grab a sizable amount and roll between both palms to form a ball. 
  • Dust the fura with some millet or rice flour. 
  • Fura is ready! Enjoy with chilled milk or yogurt. Mash the fura into the milk or yogurt to form a smoothie consistency. Don't forget to add sugar.

 3 cups Millet flour   

1/4 cup Millet flour (for coating)   

1 tbsp Ginger powder   

1 tsp Cayenne Pepper  

 1/2 tsp ground Cloves   

1/2 tsp ground black Pepper
