Slow Cooked Goat Meat Stew

Slow Cooked Nigerian Goat Meat Stew

I will be showing you how to cook a stress-free stew that is slow cooked. In my opinion, slow cooked food are always delicious and stress free. When you slow cook your food, you have time on your hand to multitask or concentrate on other things without fear of ruining your food. Stew is a staple in many countries of the world and cooked differently depending on where you are from. Nigerian stew and many African stews have tomatoes as their base. Give this method and recipe a try. 

Directions

  • Blend tomatoes, onions, peppers (use your desired amount).  
  • In a pan, pour some vegetable oil and heat it up. Once it is hot, add the chopped onions and bay leaves. Fry the onions until it is translucent, then add the tomato paste/tin tomatoes and fry for about 5 - 10 minutes or until it looses the tangy taste. Add the tomato blend and cook on medium low or low heat. 
  • This stew cooks for a longer time because it is slow cooked. Cook on low heat and stir less frequent because it will not burn quickly. For the first 3 hours, stir once in every hour. For the last 2 - 1 hour, stir every 30 minutes.
  • After 1 hour add some curry powder, thyme, seasoning cubes, onion powder, ground ginger, turmeric and salt to the stew and stir. 
  • While the stew is cooking, in another pan, add goat meat, onions, curry powder, thyme, cumin, seasoning cubes, little water and cook until done. It usually takes about 45 minute to an hour.
  • Cook down the stew until  most of the moisture is gone. At the point the stew would be more glossy, the oil and the stew would be uniform in color and the oil is more visible. The oil would settle at the top of the stew and is separate form the stew. 
  • Add the goat meat and the meat stock. The meat stock adds more flavor  to the stew and increases them volume of the stew. If you are wondering why more fluid is added at the end after cooking down the stew to remove most of the fluid. The delicious taste of the stew comes from frying that long. Adding the meat stock adds more flavor and increases the quantity of the stew so that it can last longer. 
  • Taste for seasoning and adjust accordingly. Cook for 5 minutes and the stew is ready. 
  • Total cook time was 5 hours


Ingredients 

Goat meat 

4 cans (14.5 oz) tomatoes 

1.5 cups Olive oil 

4 Habanero pepper 

4 cups red bell pepper 

1/4 cup tomato paste 

2 large onions 

2 Bay leaves 

2 tsp Curry powder 

1 tsp cumin

 1 tsp thyme 

1 tsp onion powder 

1 tsp turmeric powder 

1 tsp ground ginger 

4 seasoning cubes 

Salt to taste
