PEANUT BUTTER SOUP

Peanut Butter Soup

Groundnut soup or peanut butter soup with a popular soup in some African countries.  Groundnut soup also known as peanut butter soup is a very simple and affordable dish. Peanut soup is a very popular soup worldwide, many cultures cook this food in their own traditional way. I bet it is tasty regardless of how it was prepared. My recipe is made with groundnut/peanut paste, goat meat peppers, onion, palm oil and other Nigerian ingredients. It is so delicious and finger licking. You can't get enough of it.

Directions

  • Cook goat meat with some chopped onion, 2 seasoning cube, salt and Cameroon pepper to taste until done (1 hour). Make sure there is enough water for meat stock.
  • Prep other ingredients. If you are using raw groundnuts, roast and them to form a smooth paste. For the groundnut paste that is solid because the oil has been extracted, reconstitute it with warm water until it forms a loose consistency. You can blend it in a blender for easy mix or you could mash it with the back of a spoon or potato masher.
  • When meat is done, add blended onion and pepper mixture, crayfish, ground crayfish, palm oil, seasoning cubes; stir and cover to cook for about 5 minutes.
  • Add groundnut/peanut paste, stir and cook for about 5 - 10 minutes, stirring at every interval to prevent the soup from burning at the bottom. Then add periwinkle, bitter leaf and uziza leaves. Cook until it thickens to your preference. But don't forget to taste for salt and add as needed. Enjoy!

  • 1  1/2 cups groundnut/peanut paste
  • 3/4 cup palm oil
  • Goat meat
  • 3 habenero peppers
  • 1 large onion
  • 1/2 cup whole crayfish
  • 1/2 cup dried shrimp
  • 1/2 cup ground crayfish
  • 4 seasoning cubes
  • Salt
  • Cameroon pepper
  • 1/2 cup periwinkle
  • Handful bitter leaf
  • Handful dried uziza leaf
