pepper fish & sauce

Pepper Fish & Sauce

Pepper fish sauce  is a very spicy and delicious sauce. It can be enjoyed with white rice, jollof rice, beans, fried or boiled yams and even moi moi. Pepper fish or pepper sauce is a very crowd pleasing addition to any party. The taste is out of this world and  you can't get enough of it.

Directions

  • Wash, cut and gut fish.
  • After cleaning the fish, set it to drain. While the fish is draining, season fish with onion powder, salt and Cameroon pepper, rub spices in and let it continue to drain and air dry for 30 - 60 minutes
  • Heat up enough oil in a frying pan over medium heat. Once hot enough, fry fish on each side for 5 minutes (Try not to disturb or flip fish before 5 minutes).You can flip fish back and forth until fried to your preference. Remove fish from oil and drain on a paper towel when done.
  • Blend bell peppers, habanero peppers, scotch bonnet peppers,and onion roughly or smoothly.
  • Pour some oil the fish was fried in into a saucepan and heat it up over medium heat. Once hot, fry the pepper mix and fry, frequently stir it so that it does not burn (every 4 - 5 minutes).
  • Add curry powder, garlic powder, seasoning cubes, salt, and ground ginger and stir everything together (you can use any spices of your choice). Fry for about 60 minutes, then add fried fish and cook for another 5 - 10 minute. Do not forget to taste sauce and adjust seasoning as needed.
  • Serve with rice, yam, beans, or moi moi. Enjoy!


Ingredients

  • 2 Mackerel fish
  • 2 large bell peppers
  • 5 Habanero peppers
  • 2 scotch bonnet peppers
  • 1 large onion
  • Salt to taste
  • 1 tsp garlic powder
  • 2 seasoning cubes
  • 1 tsp ground ginger
  • 1 tsp curry powder
  • 1 tsp onion powder
  • 1 tsp Cameroon pepper
  • Enough vegetable oil to shallow fry fish
