peppered turkey

Nigerian Peppered Turkey

Pepper turkey is a party favorite. The turkey is well seasoned (baked or fried) and later cooked in pepper sauce. It is spicy and very delicious because it is loaded with flavor. Pepper turkey will take your party jollof rice to another level. People can't get enough of it, they prefer it over the boring plain fried turkey. After trying out this recipe, this will be the only way you would cook your turkey.

Directions

  • Wash the turkey.
  • Blend onion, garlic, ginger and pepper. Pour the blend over the turkey. Add curry, old bay seasoning, salt, seasoning cubes, zest the lemon over the meat and squeeze in the lemon juice. Rub and coat each piece with the marinade. Cover and place in the fridge to marinate overnight. 
  • Remove from fridge the next day and rotate the meat. Move the bottom pieces to the top and move the top pieces to the bottom. And let it sit on the counter top for an hour or more. This will ensure that every piece of the turkey soaks up the marinade.
  • Preheat oven to 350 degrees F/180 degrees C. Spread the turkey over a lined baking sheet and bake for 2 hours or more (if the pieces are large) until they are done and have developed some color. Remember to flip them on both sides (every 30 minutes) to ensure even browning.
  • Blend habanero peppers, bell peppers, garlic and onion. Heat up oil in a pan over medium heat. Once it is hot enough, pour in the pepper blend and begin to cook it down.
  • Add seasoning cubes, curry powder, sage, rosemary, ginger and salt to taste after cooking the sauce for a few minutes. Frequently stir the sauce at each interval (5 minutes) to prevent the sauce from burning.
  • When the sauce is done (cooked down), add the baked turkey in batches and cook  for 5 minutes. Then take out the first batch and repeat the same with the other batches until every piece of turkey is coated and cooked in the pepper sauce. Return all the pieces of turkey to the pan after the last batch is added. Pepper turkey is ready. Enjoy!!!

Turkey

2 garlic cloves

1/2 large onion

2 habanero pepper

1 thumb of ginger

1 tsp salt

1 tsp old bay seasoning

1 tsp curry powder

2 seasoning cubes

1 lemon


Sauce

3 large red bell peppers

5 red habanero peppers

1 cup vegetable oil

1 large onion

2 garlic cloves

1 tsp curry powder

1 tsp dried rosemary

1 tsp ground ginger

1 tsp sage

1 tsp salt
