Pineapple coconut popsicle

Pineapple Coconut Popsicle

With only three ingredients you can make a delicious and healthy popsicles from the comfort of your home. When you make your popsicles at home, you are in control of the quantity and quality of ingredients used. You decide what goes into the popsicle you give to your kids. You can make it as healthy and guilt-free as possible. It is also a good way to make the kids eat their Vitamins by making the popsicles with nutritious fruits. 

Directions

  • Dice dates and soak in water for at least 1 hour or overnight. Make sure to add enough water to cover the dates and cover with plastic wrap or a lid, then refrigerate if you are soaking it overnight.
  • Wash and peel the pineapple or use frozen pineapple chunks
  • Blend pineapple chunks, dates and coconut milk until smooth.
  • Pour the blend into the popsicle molds. Try not to fill the molds to the brim so that they do not overflow when the sticks are inserted.
  • You can also use popsicle bags or ziplock bags for the leftover smoothie.
  • Use snack size ziplock bags and double sided tape. Cut tape to the length of the ziplock bag, Attach the tape on one side of the bag, closer to the opening. Open the bag and pour the smoothie into the bag halfway (do not fill the bag because it has to be folded over itself to create the shape of a popsicle bag). Remove all air and seal the bag properly to prevent a spill, then fold the bag towards the side that has the tape. It is going to stick because tape is double sided.
  • Freeze for at least 7-8 hours or overnight. Enjoy!!!


Ingredients

  • 4 cups frozen/fresh pineapple chunks
  • 1 - 1  1/4 cups coconut milk
  • 1/2 cup Dates (add more as needed).
