Plantain & Corn Moi-Moi | Kwoka | Plantain Pudding

Plantain & Corn Moi-Moi | Kwoka | Plantain Pudding

Plantain  and corn pudding very sweet and savory delicacy that is so easy to make. Plantain and corn moi moi is a common dish in Delta state, Nigeria popularly known as kwoka. There are other variations of this pudding such as the corn moi moi or plantain moi moi

Directions

  • Soak the cornmeal in water to hydrate it (you could use fresh corn). The water should be at the same level as the cornmeal. Set aside to soak.
  • Wash the banana leaves and pat dry. Then wilt the leaves. To wilt the leaves, pass the leaves over a heat source. it make the leave flexible or pliable for use.
  • Wash and peel the plantains. Blend the pepper, onion, plantains, crayfish, seasoning cube and soak cornmeal (or fresh corn)..
  • Pour mixture in a bowl, add palm oil and salt and mix to combine.
  • Fold the leaves into a cone shape, bend the bottom part to prevent the mixture slipping. Pour the mixture in to the leaves. Fold the top to seal the mixture in. 
  • Heat up some water in a pan. Use a steamer if you have one. But if not, line the bottom of the pan with twigs or some banana leaves. This gives the pudding some elevation. Steam for 30 - 60 minutes or till done.



Ingredients:  

4 over ripe Plantains 

 2 cups cornmeal  

3 habanero peppers

  1 medium onion  

1/4 cup ground crayfish  

1/3 cup palm oil  

1 seasoning cube  

Salt to taste  

                                  Banana leaves for wrapping
