Sesame Candy | Kantun ridi | Benne cake | Simsim

Sesame candy is a very sweet nutty snack made with sesame seeds and sugar. Sesame candy is a common and popular snack wherever sesame seeds are found. Though they may be cultivated mostly for oil, sesame seeds are added as garnishes to many Asian meals made into snacks. and are sometimes part of the main ingredient of  a delicious dish. In Nigeria, sesame seeds are mostly made into snacks or soup.  Sesame seeds are healthy and nutritious. They are high in fiber, calcium, vitamins, healthy fats, magnesium and so many other nutrients. So they are sweet and also good for you.

Directions

  • Wash the sesame seeds until the water runs clear and try to get rid of any sand. Drain for as long as you want or spread it out to dry.
  • Toast sesame seeds over medium heat until they begin to toast and produce a nutty smell. Stir to prevent it from burning. When it is toasted, you can check by tasting it (it will be crunchy) or rub it between your finger and if it peels off that means they are well toasted. You could also toast them until there is a change in color. Set it aside and caramelize the sugar.
  • Pour sugar in a pan, add corn syrup and cook over medium heat until it develops a golden color. Do not stir until the sugar melts. You can stir when sugar dissolves or when there is a change in color. This usually happens after 10 - 15 minutes.
  • Stir the caramelized sugar when the color is golden and add the toasted sesame seeds. Stir to combine. Put it in a mold if you are using one. Otherwise dump it on a parchment paper and roll it out with a greased rolling pin. Cut quickly while it is still warm into your desired shape and size. Enjoy!

1/2 cup granulated sugar

1/4 cup light corn syrup
