Nigerian Egg Roll

Nigerian Egg Rolls

This delicious snack is usually sold on the streets. With this tip you make your very own at home

Directions

  • Boil the eggs. When done, peel the eggs and pat dry with paper towel.
  • Sift the flour, then add baking powder, salt, ground nutmeg and mix to combine.
  • Add the room temperature butter to the dry ingredient and mix in until it looks like bread crumbs.
  • Crack the egg into the milk and whisk.
  • Add the wet ingredient to the dry ingredients and mix. Adding the wet ingredient in gradually until it forms a soft ball of dough. Cover to rest for 5 - 10 minutes.
  • After 10 minutes, cut the dough into six pieces, one for each egg. Wrap the dough around each, making sure it is properly sealed. If not, the dough could pop open in the oil.
  • Heat up some vegetable oil on medium heat. Once hot enough, fry the egg rolls, frequently moving them because they tend to sink to the bottom due to their weight. If you don't move them, they will develop a darker spot on one side. After a while they will begin to float. Fry till golden brown.


Ingredients 

2 cups All purpose flour 

6 boiled eggs 

1/2 cup evaporated milk at room temperature

1 raw egg at room temperature

2 tbsp butter  at room temperature

1 tsp Nutmeg 

1/2 tsp baking powder 

1/4 tsp salt 

Oil for frying 

Carrot Puff-Puff

Carrot Puff-Puff

Carrot puff puff is a very healthy and delicious version of puff puff. This is a clever way to sneak in fruit or veggies into our kids diet. The carrot puff puff is so delicious and colorful that nobody would even suspect that it is healthy.

Directions

  • Wash and blend the carrots with 2  1/2 cups of warm water. Strain the puree with a fine mesh strainer or a chiffon cloth to extract the juice. Toss or use the pulp for smoothie. Wheat flour has a lot of fiber, so that would compensate for the lost carrot fiber.
  • Sift the wheat flour, add sugar, yeast,salt, ground nutmeg and mix to combine. 
  • Add lemon extract and the warm carrot juice to the dry ingredients gradually and mix. The dough should be wet, loose but thicker than a pancake batter.
  •  Cover and place in a warm place to proof for 45 - 60 minutes. After 60 minutes deflate the dough. 
  • Heat up some vegetable oil on a medium heat to deep fry the dough. Once hot enough, scoop the dough with your hand or an ice cream scoop and drop into the hot oil. Fry puff puff on both sides until golden brown. 
  • Remove from oil and spread on paper towel to soak up any excess oil. 


Ingredients: 

3 1/2 cups wheat flour 

1/2 cup sugar 

2 cups Carrot juice 

1 packet yeast (fast acting) 

1 tsp salt 

1 tsp lemon extract 

1 tsp ground Nutmeg

Nigerian buns is a very rich and sweet snack that is crunchy on the outside but fluffy on the inside. It taste like fried cake that anyone would love. It is like another Nigerian snack - Puff-Puff but more delicious. The ingredients are similar to ingredients in cake recipe but easier to make. You do not need any gadget to make the snack, it is deep fried on a stove top 

Directions

  • Sift 3 cups flour, add 2 tsp baking powder, 1 tsp salt,  1/2 cup dried milk and mix together.
  •  To the dry ingredients, crack in three eggs at room temperature, add 3/4 cup water and mix. You can use a spatula or mixer . 
  • Once properly mixed, cover with a plastic wrap to rest and prevent from drying out.
  • Heat up some vegetable oil. Use a skewer or wooden spoon to check heat level. if you see bubbles around the wood, that mean it is hot enough. 
  • Scoop and drop batter into the hot oil using the hand or an ice cream scoop. Fry on both sides until golden brown.
  • Remember to regulate the heat. If it is browning quickly, reduce the  heat.
  • When it is golden brown, from from oil, let it cool down and enjoy!

Puff-Puff

Puff-Puff

Nigerian  Puff-Puff is made with only a few ingredients. It is quick, simple and easy to make. I will also show you different techniques to use when frying your Puff- Puff. Puff- Puff is a very popular snack in Nigeria and some other African countries. It is a street food that is sold to school kids during break period and around on the streets of Nigeria. Most Nigerian kids grew up loving this snack. This is a vegan, egg free and dairy-free snack.

Directions

  • Sift the all purpose flour, add sugar, yeast,salt, ground nutmeg and mix to combine.
  • Add warm water to the dry ingredients gradually and mix. The dough should be wet, loose but thicker than a pancake batter.
  • Cover and place in a warm place to proof for 45 - 60 minutes.
