Strawberry buttercream frosting

Strawberry buttercream frosting

When in season, making buttercream frosty with strawberry is an excellent way to enjoy sweet ripe strawberries. You will not need any food color because the color is bright and natural. This is a very good reason to make your own strawberry buttercream frosting at home because you can control what goes into the mix. This strawberry buttercream frosting is so delicious that you can't get enough of it. It is very simple and straightforward.

Directions

  • Blend strawberry to puree. Pour puree into a saucepan and cook down over low heat for about 15 - 20 minutes to reduce to a concentrate. Stir frequently to prevent it from burning.
  • Transfer strawberry concentrate to a bowl and refrigerate to cool it down for about  30 minutes.
  • Beat soft butter for 1 minute or until fluffy. Gradually add sifted powdered sugar and cream until well incorporated. The buttercream will be fluffy and has doubled in size.
  • Add vanilla extract, salt, strawberry concentrate and beat for about 5 minutes.
  • Use frosting immediately or store in the fridge for up to a month or longer.


Ingredients

  •  4 cups sifted powdered sugar (icing sugar)
  • 2 sticks (1 cup) soft cold unsalted butter
  • 1 cup strawberry chunks
  • 1 tsp vanilla extract
  • 1/2 tsp salt
